Are we allowed to talk about cheese? Roger doesn't like cheese. I think it's therefore disrespectful.
Cathedral City for me. I love it, although I scolded the cat the first time I opened a pack, thinking it had passed wind by my ankles. However, after the initial whiff, it really is a lovely cheese, and so easy to slice. Not crumbly at all, unless you go for the extra mature, which is a little more temperamental, and doesn't live up to its name.
Colliers is also an excellent choice, Diane, and I'm delighted its found its way across The Pond.
I also have a great fondness for Emmental, but tend to avoid soft cheese generally, particularly the more pungent ones. The only exception to that would be when I do a Broccoli and Cauliflower Bake, which employs a full wedge of Danish Blue in the recipe. Again, perhaps even worse when it comes out its pack than Cathedral City, but within the context of the whole, simply superb!
